We made these for dinner recently. Just like when I originally shared this recipe it was a special request from my youngest daughter. People talk about kids being picky eaters and such but you know, when it comes to picky my kids take it a different direction than the average I think.
My kids like foods like jambalaya and stuffed peppers. When they become picky it is when they are faced with plastic looking and tasting foods like your typical school lunch. They prefer real foods that take a bit of time and care to prepare. Not a bad place to be (except those nights when you really just want to phone dinner in, of course then they only like certain take out places with decent food).
The recipe as done here was perfect for 8 medium sized peppers.
8 Medium peppers (top and insides removed)
1 medium onion (diced)
1 zuchini (diced)
1 eggplant (diced)
2 tomatoes (diced)
5 mushrooms (sliced)
1 Carrot (sliced in half moons)
1 clove garlic
1 lb ground beef
2 cups cooked rice
salt and pepper to taste
These are actually pretty easy. Saute all ingredients till soft. Brown ground beef. Cook off the rice if not already done (1 cup rice to 1 3/4 cup water boil for 20 min). Mix it all together and stuff the peppers.
Bake in the oven covered for roughly 1 hour. Top with tomato sauce and shaved parm or asiago cheese.
