Onion Soup

For anyone who has followed me personally around the web and various blogs, some of the videos I am currently releasing are not new. Basically, because of the change to my new home I did not bring my huge list of posts and videos with me in one fell swoop, instead I am going to rerelease them while picking and choosing what I share when.

What I am saying here is be prepared for some blasts from the past. (But really how can you go wrong with onion soup?)

Some things have a beauty in their simplicity.  French onion soup is amazing for the small list of ingredients while still having huge flavors.  It is all in how you handle the elements.

Onion Soup
4 Onions (diced or julienned)
1 clove garlic
2 Quarts stock
1 cup Beer or wine
Baguette cut into crostini and provolone cheese for topping
Caramalize the onion and garlic.  Slowly cook them down, they should be about 1/4 the original volume when done.  Deglaze with the beer and allow to reduce. Finally add the stock and bring to a boil,  reduce to desired flavor and consistancy.

Time for a pint…
