As much as nature has fought against us this year, I think we are finally coming into spring. A sure sign comes when we are able to pick our first harvests of asparagus.
We have been busy getting our garden ready for the summer. Sadly, of all the veggies we plant we haven’t planted any asparagus yet. But we are lucky in that my wife’s uncle has wild growing asparagus on his farm.
The recipe for asparagus soup is an easy one. But like many of the great tastes we can experience, many times the best recipes require little more than good ingredients treated with care.
1 lb Asparagus (reserve tips for garnish)
1 qt chicken stock
1 cup milk
Salt and pepper to taste
Sweat the asparagus and onion till the onion is translucent. Blend till smooth with enough stock to keep it moving. Add back to cooking pot with rest of the stock. Heat through and then add milk and asparagus tips and heat through again.
